The S33 series is an excellent example of what’s possible when Japanese blade designs combine with Western handles. The S33 series has thin, light weight VG10 blades capable of precision work. The nimble blades cut beautifully and are an excellent choice for the individual looking for a clean cutting, traditional blade but prefers the Western style handle. The 33 layers of damascus steel encasing the VG10 core help stabilize the blade and give it a striking appearance. Each pattern will be unique unto it’s self due to the detailed forging process. Each knife is hand engraved.
The Bunka has become very popular in recent years and for good reason. The Bunka profile is similar to the Kiritsuke Gyuto, but with a shorter blade and more curvature in the cutting edge. The S33 Bunka is a great choice for the cook who likes to mince or slice and prefers a smaller knife. The VG10 core provides excellent edge retention and corrosion resistance. Combine the blade steels with the blade design, and you can brunoise all day.
