The Number 7 santoku is very different compared to the chef series. The knife is ground with a heavy convex taper from the spine tapering down to the cutting edge. The slightly thicker blade and even convex profile makes the santoku a little tougher compared to the fully flat ground chef knives. The edge curvature from the heel to the tip is very gradual making the santoku a natural push/pull cutter and will excel at vegetable preparation, but still be able to tackle proteins with ease.
